Sticky Pomegranate Chicken

Apart from a whole juicy roast chicken, I think sticky chicken drumsticks is the best way to eat chicken and I much prefer the leg meat to the breast meat. This is a sticky and sweet yet slightly sour marinade that makes the chicken oh so delicious. I decided to use pomegranate because I like the sour quality they give, I’ve been eating a lot of pomegranates recently so there is usually one laying around and also they do look pretty awesome. These drumsticks are perfect on their own or with a salad or rice dish and I bet there even better finished off on a barbecue.
Be warned this does leave you in a bit of a mess with marinade all over your face so not a good look for a first date but don’t let that put you off its all part of the fun. I really quite like eating with my hands and it really is the only way to eat a chicken drumstick.

Sticky Pomegranate Chicken                                                           Print Recipe
Takes 45 minutes        Serves 4

700g Chicken wings and drumsticks
For the marinade
200ml Pomegranate juice
1 Tablespoon Soy Sauce
2 Tablespoons Brown Sugar
2 Tablespoons Honey
2 Cloves of Garlic crushed
Juice of 1 Lime

To Garnish
1 Pomegranate (the seeds)
Small bunch of mint leaves  chopped

Directions
Put the oven on gas mark 6
In a frying pan brown off the chicken until golden brown and put on a baking tray. In the same pan add all the marinade ingredients mix together and cook on medium heat simmering for a few minutes until the marinade thickens. Pour the marinade over the chicken covering well and bake in the oven for about 25 – 30 minutes.
Sprinkle over the pomegranate seeds and chopped mint, delicious served with yogurt and cous cous.
