Rose and Cardamom Set Rice Pudding

Cool, creamy and delicate rose and cardamom set rice pudding.

Rose and cardamom when subtly done is one of my favourite flavour combinations. It immediately transports me to somewhere far away from here, somewhere unknown to me, somewhere Im  yet to experience. Its exciting. Rice pudding on the other hand is home, its comfort and familiar. The different feelings they evoke are both welcome ones but conflicting. The flavours and textures however are not battling, the floral sweetness of the rose and earthy cardamom meld with the cool creamy rice perfectly. I think it works even better being chilled it seems to bring out the flavours.

These rose and cardamom rice puddings are set, you could cool them in a mould and turn them out onto a plate. I however wanted to use these beautiful little gasses because I just love the burnt amber colour of them so much. I hope you all have a wonderful week, good news is because it was a bank holiday here were already half way through the week tomorrow, yay!

Rose and Cardamom Set Rice Pudding

  • Cook Time: 25m
  • Total Time: 2h 25m

Ingredients

  • 650 ml Gold top milk or whole milk
  • 150 g Pudding rice or short grain rice
  • 4 Cardamom pods
  • 4 tbsp. Honey
  • 1 tsp. Vanilla paste
  • 2 tbsp. Rose water
  • 2 tbsp. Pistachios chopped to decorate
  • 2 tbsp. Dried rose petals to decorate

Instructions

  1. In a pan bring the milk to a boil, add the rice and cardamom pods and reduce heat to a simmer. Cook for about 25 mins until the rice is tender, stir regularly.
  2. Stir in the honey, vanilla and rosewater. Leave to cool slightly and then distribute between four glasses. Refrigerate for about 2 hours until set.
  3. Decorate with some chopped pistachios and dried rose petals.

 

  • I’ve been craving my mom’s rice pudding lately like crazy and now I see your post and can’t stop drooling (mentally drooling, though). The addition of cardamom and rose gives a really exotic and fancy touch to this classic and always wining recipe.

  • This looks seriously yum! I’ve got to try it. It’s so pretty and would be perfect to serve at a dinner party, ESPECIALLY love that it can be made ahead! Nothing worse than getting FOMO whilst your guests are having fun and you’re hiding away prepping pudding in the kitchen!

  • I love this so much! Rose and cardamom always takes me back home (check out an Arabic dessert called mahalabiya, I think you will love it and it’s super easy to make).
