Its that time of year again when pumpkins are everywhere and its hard to resist buying them all. I always like to get at least one to make the house really feel like autumn. There also always has to be at least one pumpkin based treat. Last year I made a pumpkin and cobnut loaf cake, this year its a pumpkin and tahini cheesecake. The cheesecake is baked and the base is made from those lovely caramelised lotus biscoff biscuits. My boyfriend is quite the cheesecake connoisseur and this one past his test I’m pleased to say.

I’m afraid this post is going to be a little short this week. I’m currently writing this late at night, my family have come to stay for a few days and are now all in bed after a busy but lovely day soaking up Edinburgh’s history. Pumpkin and Tahini Cheesecake

Pumpkin and tahini cheesecake

  • Cook Time: 1h 40m

Ingredients

  • 250 g Biscoff Lotus biscuits
  • 125 g Unsalted butter, melted
  • 600 g Cream cheese
  • 450 g Pumpkin puree
  • 150 g Soft brown sugar
  • 3 tbsp. Tahini
  • 4 tbsp. Maple syrup
  • 5 Eggs
  • 1 tsp. Cinnamon

Instructions

  1. Preheat the oven to 180c. Grease and line a loose bottom cake tin with parchment. Crush the biscuits and mix together with the melted butter. Push into the base of the cake tin and bake for 10 minutes. Leave to cool.
  2. In a bowl whisk together all the remaining ingredients until fully combined. Wrap the base of the cake tin in foil and place on a baking tin filled with water, the water should come half way up the cake tin. Pour the cheesecake mixture into the cake tin and bake for about 1 hour 30 minutes. Leave to cool before removing from the tin.
