Pumpkin and cob nut loaf cake, delicious served lightly toasted with cinnamon butter and honeycomb.
What to do with all those left over Halloween pumpkins, turn them into cake of course. This cake has all the flavours of autumn in it, cinnamon, pumpkin and I also added cob nuts. If you’ve never tried a cob nut before they are very similar to a hazelnut and really delicious.
This pumpkin cake is great just on its own with a cup of tea, but it was even better when I toasted it under the grill and topped it with some unsalted butter mixed with cinnamon and a bit of honey comb or a drizzle of honey.
