Pumpkin and Cob Nut Loaf Cake

Pumpkin and cob nut loaf cake, delicious served lightly toasted with cinnamon butter and honeycomb.

What to do with all those left over Halloween pumpkins, turn them into cake of course. This cake has all the flavours of autumn in it, cinnamon, pumpkin and I also added cob nuts. If you’ve never tried a cob nut before they are very similar to a hazelnut and really delicious.

This pumpkin cake is great just on its own with a cup of tea, but it was even better when I toasted it under the grill and topped it with some unsalted butter mixed with cinnamon and a bit of honey comb or a drizzle of honey. Pumpkin and Cob Nut Loaf Cake

Pumpkin and cob nut loaf cake

Ingredients

  • 125 g Unsalted butter
  • 250 g Soft brown sugar
  • 3 Eggs
  • 175 g Pureed pumpkin
  • 1 tsp. Vanilla extract
  • 300 g Plain flour
  • 1 tbsp. Baking powder
  • 1/2 tsp. Bi carbonate soda
  • 1 tsp. Cinnamon
  • 50 g Chopped cob nuts
  • 50 g Pumpkin seeds

Instructions

  1. Heat the oven to 180c/160fan/gas4/350f and line a loaf tin. In a bowl cream together the butter and sugar until smooth.Then incorporate one egg at a time when incorporated mix in the pumpkin puree and vanilla.
  2. Now sift in the flour, baking powder, bi carb and cinnamon and mix well. Fold in the cob nuts and pumpkin seeds, set some pumpkin seeds aside to sprinkle on the top.
  3. Pour mixture into the loaf tin and bake for about 1 hour until the skewer comes out clean. Leave to cool on a wire rack. I served mine with cinnamon butter and honeycomb.
  • This loaf cake has such a perfect texture and crumb. It looks absolutely delicious Rebecca! I’ve never tasted a cob nut before and highly doubt I’ll find them here in Spain. But hazelnuts are very similar so no problem!
