A super simple and tasty new season jersey royals and mackerel salad with a wild garlic sour cream.
This time of year is just the most exciting time in terms of new season produce, it allows our creativity in the kitchen to flourish but also in some ways it gives it a rest. The produce is so good that little is needed to make them shine bright just all on their own. This week I have lovely sweet jersey royals and some locally foraged wild garlic. A walk through the woods is even better when the wild garlic is out and the air is filled with the heady allium scent. I blitzed up my wild garlic with a little oil and folded it through some cool sour cream. The combination of the jersey royals, garlicky sour cream and sweet cure mackerel is wonderful, the ingredients compliment each other and don’t compete for the spotlight. Just a perfect spring lunch.
