Chocolate and chestnut brownies


Its less than one week till Christmas, what the! When did that happen? I apologize for the lack of festive posts but there will be one coming up in a couple of days. I have tried to add a bit of a seasonal touch to this recipe with the chestnuts. I used chestnut puree in my brownie mix and also roasted some chestnuts for the top.

Squidgy, fudgey, chocolaty, heavenly goodness. Brownies are a definite crowd pleaser, when in doubt bake brownies. The key to a perfect brownie is don’t overcook it, you want it to still be a bit gooey in the middle. You can really experiment and add a bit of whatever you fancy to your brownies, I really like sour cherries. Theres not an awful lot to say about these brownies there pretty straight forward but they really are bloomin delicious.

Chocolate and chestnut brownies                                                                         
Cooks 20 mins                          Makes 16

175g Unsalted butter
200g Dark chocolate
200g Caster sugar
240g Chestnut puree
2 Large eggs
100g Plain flour
1 tsp Baking powder
1 Pinch salt
1/2 tsp Vanilla essence
16 Roasted chestnuts

1. Preheat the oven to 180 celcius. Melt the butter and chocolate in a bowl over a pan of simmering water.
2. Stir in the sugar, then beat in the chestnut puree.
3. Beat in the eggs one at a time.
4. Stir in the flour and salt and mix well until all combined.
5. Pour into a lined baking tin. Crush up the roasted chestnuts and sprinkle over the brownies.
6. Bake for about 20 minutes, should still be a bit gooey inside. Leave to cool and cut into 16 pieces.
