Blackberry and Blueberry No Bake Cheesecake with Oreo Base

A beautiful blackberry and blueberry no bake cheesecake with an oreo base. Simple but impressive.

This cheesecake would be perfect for a celebration there is no cooking and you can make ahead of time. Pile it high with fresh and frozen berries to give it the wow factor. I used oreos to make a really dark biscuit base which I think looks great with the blackberries. I finished off the cheesecake with a thin jelly layer to add an intense berry hit and a wonderful gloss.

Blackberry and Blueberry No Bake Cheesecake with Oreo Base

blackberry cheesecake Takes 1 hour 30 plus overnight to set.

Ingredients

  • 15 Oreos
  • 40 g Melted butter
  • 100 g Blueberries
  • 225 g Blackberries
  • 2 Tbsps Sugar
  • 600 g Cream cheese
  • 200 g Thick cream
  • 2 tsps Vanilla extract
  • 100 g Sugar
  • 1 Gelatin leaf
  • Blackberries and blueberries to decorate

Instructions

  1. Line a 15cm spring form cake tin with baking paper. Blitz the oreos in a blender or crush in a bowl add the melted butter and combine. Pour into cake tin and push down leave to set in fridge for 1 hour.
  2. In a pan add the berries, 2 tbsp of sugar and a dash of water heat until sugar dissolves and berries breakdown about 5 mins. Pass through a sieve keep the juice and discard the pulp.
  3. In a bowl whisk together the cream cheese, cream, sugar and vanilla. Add half the berry juice you saved and whisk until smooth. Pour onto oreo base and smooth over refrigerate for couple of hours and then make your jelly layer.
  4. Soak the gelatin in cold water for 5 mins. Reheat the set aside berry juice. Squeeze out excess water from the gelatin leaf and put into the berry juice stir until completely dissolved. Leave to cool a little and then pour over the top of your cheesecake. Leave to set in fridge over night. When ready to serve decorate with berries.
