I’m currently writing this post from a cosy corner of my favourite coffee shop to work from in Edinburgh. The Black Medicine coffee co. It has so many little nooks to get lost in and hide away from the world outside. I recently changed up my morning routine a little and I now walk half my commute to work through the beautiful Holyrood park and then half way up the Royal Mile. It takes 40 minutes but only adds an extra 10 minutes to my journey as the bus always take ages. The benefits are great as long as the Scottish weather is a little forgiving that day. The walk gets my body started for the day in a positive way and being such a beautiful walk it really gets my creative juices flowing. Once a week I leave earlier and have breakfast at the coffee shop. I spend some time writing and forming ideas before I head to my bus, for the second part of my journey and on to the day job.

I don’t know why but I always seem to be pretty productive in a coffee shop. Maybe its knowing my time is limited, feeling I should look like I’m actually doing something or maybe the gentle lull of the cafes morning hustle and bustle. Whatever it is it seems to work for me. Where are you most productive?

Anyway on to this banana and peanut butter loaf. Banana loaf has always been one of my absolute favourite things and peanut butter is another. Obviously I knew the combination would work well but it wasn’t until recently when I had a banana and peanut butter croissant from a lovely bakery near me called twelve triangles that I realised it was a combination to make angels sing. I like to use crunchy peanut butter to add some texture. I use spelt flour for extra nuttiness and almond oil as my fat. I like using oil in these types of cakes, it makes them moist and tender. You can use any type of oil as long as its not too strong in flavour. For me the best way to enjoy this loaf is lightly toasted with a dollop of natural yogurt and a little honey. It makes the best mid afternoon treat or indulgent breakfast.

Banana and Peanut Butter Loaf

Banana and peanut butter loaf

  • Cook Time: 45m

Ingredients

  • 250 g Wholegrain spelt flour
  • 1 tsp. Baking powder
  • 150 g Soft brown sugar
  • Pinch of salt
  • 5 Ripe bananas
  • 1 tsp. Vanilla esscence
  • 2 Eggs
  • 150 g Peanut butter (I used crunchy)
  • 175 ml Almond Oil (or another mild flavoured oil)
  • Honey and natural yogurt to serve (optional)

Instructions

  1. Preheat the oven to 180c/160fan/gas4/350f. Grease and line a loaf tin.
  2. In a bowl mix together the flour, baking powder, salt and sugar. In a separate bowl mash 4 of the bananas and set one aside for the top. Whisk in the vanilla and eggs to the bananas.
  3. Add the egg and banana mix to the flour a bit at a time, mixing as you go until fully combined. Now mix in the peanut butter.
  4. Gradually add in the almond oil a little at a time until fully incorporated. Pour the mixture into the loaf pan and slice the remaining banana in half lengthways and place on top of the loaf.
  5. Bake for about 45 minutes until a skewer comes out clean. Serve toasted under a grill with natural yogurt and honey.
